Capsella bursa-pastoris / Exchange Shepherd's




Edible part:
-The leaves have a flavor similar to cabbage, though they are a bit more spicy. They can be eaten raw, simmered in a little water or fried with Chinese characteristics. It is best to soak the leaves in water overnight before using them to reduce their bitterness. They taste better if they are served in soups, in salads or in baked dishes.
-dried and powdered seeds are an excellent seasoning for soups of winter. Collected in sufficient quantities, the seeds can even be used to make bread. The seeds are a good source of food for caged birds.

the early nineteenth century, the leaves of shepherd's purse were grown and sold in the markets of Philadelphia and those of other cities in eastern North America. They are still sold in markets and China. When grown, the leaves become very large and are much more tasty than the wild.

leaves make an excellent poultice for minor cuts and herbalists once used it as a decoction or poultice to stop the bleeding surface.

Salad Shepherd's Purse: Makes 2 to 3 servings
500 ml / 2 cups of young leaves of shepherd's purse, washed, shredded if necessary
125 ml / ½ cup apple, diced
15 ml / 1 tsp chopped parsley, minced
15 ml / 1 tsp tablespoon lemon juice
125 ml / ½ cup sour cream
1 ml / ¼ c.
teaspoon salt 5 ml / 1 tsp teaspoon sugar
1 ml / ¼ c. teaspoon white pepper, freshly ground
2 ml / ½ tsp teaspoon celery seed Mix

leaves shepherd's purse, apples and parsley.
Mix remaining ingredients and add them to the former.
Stir well.
Chill and serve.

Soup Recipe leaves purse pastor gives 3 or 4 servings
1 L / 4 cups beef stock or chicken or vegetable
5 ml / 1 tsp teaspoon fresh ginger, chopped
5 ml / 1 tsp tsp soy sauce
5 ml / 1 tsp tea peanut oil
Salt and pepper to taste
1 ml / ¼ c. Tea Glucamate monosodium (optional)
1 L / 4 cups young leaves of shepherd's purse, washed and cut diagonally

Wear broth to a boil and add the ginger, soy sauce, peanut oil, seasoning and monosodium glutamate.
Add the leaves to the broth, cover and simmer for 5-10 minutes.
Serve hot with your favorite Chinese dishes.

Recipe Snacks Shepherd's Purse: Makes 4 servings
250 ml / 1 cup of leaves of shepherd's purse, washed, chopped
250 ml / 1 cup cucumber, diced 500 ml
/ 2 cups cottage cheese
Parpika


Mix chopped parsley leaves shepherd's purse, cucumber and cheese. Sprinkle with paprika
and parsley.
Serve with toast or crackers.
This is an excellent snack.

Recipe Pepper's purse shepherd
In summer or fall, pick and dry the primocane shepherd's purse.
Remove pods (seeds) and use them whole or ground into powder to flavor soups or other dishes with vegetables.
can also be mixed with silicula (seeds) of Lepidus.
